Light-Struck Flavour Formation In Beer In Illuminated Display Cabinets

Refrigerated display cabinets provide an attractive means of product presentation, ensuring maximum appeal to the customer. While lighting for such cabinets is designed to promote visual impact, it is not always recognised that it can be a source of off-flavour, as discussed in this paper which, after examining the problem concluded that different beers and bottles will be affected to a greater or lesser extent by artificial lighting, different storage situations and the type of bottle, which can result in the formation of giving a "light-struck" flavour, particularly where beer is packaged in bottles other than brown. The type of fluorescent tube used will be particularly significant since the formation of this "light-struck" flavour is promoted by light of a wavelength of around 520nm or less.
